from my kitchen window



















































































i have extra dill. i have no idea what else to use it for, but i really enjoyed canning pickles with it.

and there was the prettiest cloud in the sky. it had the sweetest pink lining. sure to end up a cotton candy cloud. ; )

i haven't had homemade pickles for a while - i need to go to the local farmer's market to find some. i do hawever, have some homemade pepper jelly - yum.

My favorite thing to do with extra dill is to make potatoes with it! Just roughly chop up some basic russet potatoes and add a little olive oil, a little hot sauce, salt, pepper, and dill. Toss in a bowl until the potatoes seem to be mostly coated, lay out on a baking sheet and bake at 350F for about 30-40 minutes and they become this amazing, divine, not-quite melting in your mouth beautiful thing.

Also cut 'em lengthwise and you can have baked dill fries! Dill and potato work really well together.

Love the pickle shots. Makes me think of my Russian Bubbie who made pickles with me every summer - haven't done that in a long time - hard to find those little cucs she used here in NH. Enjoy the fruits of your labor.

I'd hang the dill upside down and let it dry in a dark place for a few weeks, then grind it, bottle it, freeze it, and take it out to apply liberally to my chicken salad each time I made it. That's what I'd do with extra dill. ;-)

You are so creative I am sure you will find a use for the left over dill. How about in a potato salad? Love the pink lining on the cloud. Love homemade pickles too. Just made the raspberry jam, now maybe I will think about pickles.

Christina, that first photo is absolutely swoon-worthy. I'm so glad you've gotten to learn how to can and pickle. It gives me hope that one day, I'll get there, too. Beautiful pickles. :)

As for your extra dill, I like to take whole feathery wands of it from the garden and lay them across salmon fillets that have already been sprinkled with a bit of white pepper, and then lay slices of lemon on top of that and drizzle everything w/olive oil, and then sprinkle a few capers on top of the lemon slices (okay, okay, more than a few ;) and then bake normally. My husband loves it when I serve the result with minced red onion (raw) at the table. Such a treat!

How beautiful...I particularly enjoyed the picture of the clouds and your words regarding it.
I wouldn't know what to do with dill, expect maybe biscuits, or a seafood seasoning perhaps.

You're canning ventures are turning out so beautifully! Homemade pickles always taste better. I use dill weed (the ferny leaves) more than I do dill seed. It's yummy in pastas with crab or tuna. How about dill sauce and grilled salmon?

canned pickles....now that brings back beautiful memories of my grandmother...her canning pickles and her 'greens'...grinding her sausage, putting that wax on her jam (wayyyyyyyyyy back memories ya'll...way back) ...i can still smell her kitchen...

Homemade dill pickles...mmm... Oh,, I can smell the dill--love dill! I was late with my plantings this year, dill for sure next summer! Fresh dill dries so nicely to use for later. Better home-dried than from the store. ;o) Happy Weekend to you & yours, Christina ((HUGS))

Pickled mangoes are my favourite. A sweet and sour taste, with an occassional burst of chilli. Love the photograph of the clouds, clouds are lovely. Right now as i gaze out of my window, I can only see stormy, dark, monsoon clouds.
